The Birbirsa coffee cooperative is located in Beshasha Badiya, Jimma. Beshasha town has very good altitude, registering at just under 2100 meters above sea level. They only produce dry process at the moment, which is fine by us considering the quality! They focus on doing one thing, and they do it very well. 

This dry fragrance reveals fruity notes, evident at all levels of roasting, including a medium-dark roast (just shy of 2nd cracks). Our lighter roasts enhance the scents of dried fruits and honey-nut granola, complemented by malty undertones. The wet aroma is more abundant with berry aromas, fruit jam, and a delicate herbal touch. These roasts produce bright, fruity flavors in this dry process coffee, with stone fruit qualities similar to other Western Ethiopian coffees we offer. While perhaps not as intense as some of our Guji naturals, Birbirsa maintains a "cleaner" profile for a dry process coffee, showcasing a plethora of aromatic fruits and a balanced sweetness.

Sipping a light roast, flavor profiles include jammy apricot and boysenberry, dried mango, and an orange marmalade note. There's some really nice roast flavors too, and the cup fades to cocoa bittering in the aftertaste. At medium roast, the vibrance was dulled quite a bit. But you're left with a bittersweet chocolate flavor that is well-suited for the syrupy texture, and a hint of blueberry accented the finish.

We don’t often market our products as organic since we cannot guarantee that all the farms we source from have the certification, but these beans come from one that has the certification! That said, all of the farms we source from use sustainable practices and traditionally don’t use chemicals or pesticides in growing or processing their coffee beans, which is a testament to their quality!
