Nestled in the high elevations of Mexico’s Sierra Madre de Chiapas, this coffee is sourced from a collection of small family farms in the Siltepec region, where coffee is grown between 1,500 and 1,900 meters above sea level. Many of these farmers cultivate just a few hectares of land, carefully tending traditional varieties such as Typica, Bourbon, Caturra, and Catuaí.
After harvest, each producer processes their coffee on-site using small-scale equipment, ferments the beans in cement tanks, and dries them under the mountain sun on rooftop patios. The result is a clean, balanced cup with broad appeal—equally enjoyable as a daily coffee or for those exploring the character of Mexican single origins. Its versatility allows the coffee to shine across a wide range of roast levels while maintaining a smooth, approachable profile.
Tasting Notes
In the cup, expect a comforting sweetness led by notes of caramelized sugar, milk chocolate, and toasted walnut. Gentle hints of corn syrup and rice syrup contribute to a smooth, rounded body, while a delicate touch of lemon black tea adds brightness as the coffee cools.
