This coffee comes from the El Bombo cooperative in Pitalito, a name shared with the surrounding growing region in Colombia’s southern Andes. “El Bombo” refers to a local tree known for its spiked seed pods—famously repurposed as playful projectiles in schoolyard games.

The cooperative, Asombombo, works with smallholder farmers across Huila and Cauca. This particular lot is sourced from six producers in the municipalities of Oporapa and Isnos, grown between 1500–2000 meters above sea level. The lot is primarily Caturra and Variedad Colombia, with a small contribution of Pink Bourbon adding subtle complexity.

Tasting Notes

Malted chocolate and burnt sugar lead the dry fragrance, layered with walnut and toffee sweetness. As the cup opens, caramel and a soft dried fruit note emerge.

Expect a balanced bittersweet profile—caramel-accented chocolate through the middle, finishing with a powdery cocoa dryness. Acidity is moderate, with a gentle citrus lift that complements the darker chocolate tones.

Dark roasting brings a creamy, weighty mouthfeel with notes of cocoa powder, dark chocolate biscuit, dried orange, and a soft hazelnut finish. Especially good in immersion style brewers, like French Press or Clever Dripper/Hario Switch.
